Upgrade vite dependencies

Upgrades vite v5 -> v8, @vitejs/plugin-react v4 -> v6

Modern vite supports tsconfig paths out of the box, so vite-tsconfig-paths is not needed anymore. Additionally, I don't see why it was installed, there are no tsconfig paths anyway.
