Fix exam-cut snap bar & badge being hard to see on dark mode

The exam-cutting bar for admins is difficult to see on dark mode because it is hardcoded to black.

This MR changes it to use --mantine-color-text, which is guaranteed to be visible on the page background for both light and dark mode.
