Draft: Dark Theme Demo (Mantine-based)

This is a dark theme demo intended for Mark such that he can show a staging instance with it enabled. Later on once !345 (merged) is merged we can work on polishing the dark mode, merging in the dark mode PDF code by Lukas and adding a theme switcher.
