Rename "summaries" to "documents"

This makes the feature usable for a variety of use cases without making it an apparent feature abuse.

This MR consists solely of "Search & Replace" commits and should be checked for grammar errors (but I think Summaries → Documents & Summary → Document makes sense everywhere).
